He has lived in Enniscorthy all his life. (apart from a stint in Dublin for college and work)
David is a qualified IRFU stage 3 rugby coach and IRFU accredited Strength and Conditioning coach.

Active. I love playing any sport I can.
Describe your diet in a few words
Performance defined; clean carbs, high fibre and high protein
How do you relax?
I kick back in front of the tv in the evenings. I like to read articles connected to coaching and different training methods too.
How well do you sleep & how for long?
I sleep quite well (I have a 1 year old) try to get to bed by 10:30. Up at 7am. Ashley Jones (former AllBlacks Coach) said that every hours sleep before midnight is worth 2 hours after midnight when it comes to recovery so I like getting to bed early.

3 gym sessions (2 strength, 1 metabolic conditioning)
I keep my gym sessions under 1 hour with quite low rest periods to reflect the demands of rugby.
2 pitch sessions (90 minutes each, Tuesday is usually loads of contact and conditioning and Thursday is more preparation for games) and a game on Saturday.

Aldi, Martin Doyle Butchers and Millstream Fish Shop. (All Enniscorthy)
Where do you buy your main groceries?
Aldi. It has everything I look for; good quality fruit, veg and meat at a great price.
Where do you buy your meat?
Aldi and Martin Doyle Butchers (especially for steak)
Fresh or frozen?
Always fresh! I don't like frozen meat.
Where do you buy your fish?
Millstream fish when possible. There is always a great selection. I snack on prawns and Aldi do great prawns.

Evolv and Holland and Barrett. (Spirulina every morning)

I think for the fact that I can get everything there it would have to be Aldi! I love Martin Doyle's butchers too!

I love the Alamo in Enniscorthy. I drink a lot of coffee so O'Briens is always a winner. (Always Soya milk)

I love comfort food. I cook cottage pie every week. I use passata, Worcestershire Sauce and soy sauce to make a gravy for the mince with onions and peppers.
For the topping I either have mashed cauliflower(after it has been well steamed) and Philadelphia cheese or mashed sweet potato and broccoli.
I always top it with grated cheese.
I usually serve it on its own or with green beans.

I'm lucky in that the gym where I train (Pump Palace in Enniscorthy) have their own brand whey protein. I find it great for recovery and is low-carb too. They have put a lot of time along with Future Nutrition in Enniscorthy into developing their products.

Any more advice for Wexford Healthy Eaters?
The 2 things I have learned when it comes to diet and food are:
1) It's all about what suits you, different people will have different results with foods.
2) Don't be afraid to try recipes out. Some of the best meals I've cooked are the ones when I've winged it. It's all about trial and error!
